# How to Make It:

- Heat olive oil and butter in a large heavy pot over medium heat. Add onion, carrot, and celery; sauté for 7 to 8 minutes until softened and translucent.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Incorporate ground beef and pork, breaking up the meat with a spoon. Cook until browned and moisture evaporates, approximately 10 minutes.
- Stir in tomato paste and cook for 2 minutes. Pour in red wine, scraping browned bits from the pot; simmer until mostly evaporated, about 3 minutes.
- Add crushed tomatoes, stock, bay leaf, oregano, thyme, salt, and black pepper. Stir to combine thoroughly.
- Bring sauce to a gentle simmer. Partially cover and cook over low heat for 2 hours, stirring occasionally.
- Stir in milk and simmer uncovered for 20 minutes until sauce attains a rich, thick consistency. Adjust seasoning as needed.
- Remove bay leaf. Serve hot over cooked pasta or polenta, topped with Parmigiano-Reggiano if desired.
