Tender chicken breasts simmered in a rich, creamy sauce with sautéed mushrooms and aromatic herbs—an elegant, comforting main course perfect for any night.

I first served this and it quickly became a family favorite for weeknight dinners.

Ingredients

  • Chicken: 4 boneless skinless chicken breasts, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 tablespoons olive oil
  • Mushrooms & Vegetables: 2 cups (200 g) cremini or white mushrooms sliced, 1 small yellow onion finely chopped, 3 cloves garlic minced
  • Sauce: 1 cup (240 ml) heavy cream, 1/2 cup (120 ml) low sodium chicken broth, 1 teaspoon Dijon mustard, 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried), 1 teaspoon fresh rosemary minced (or 1/2 teaspoon dried), 1 tablespoon fresh parsley chopped (plus more for garnish), 1/2 cup (50 g) grated Parmesan cheese

Instructions

Step 1:
Season the chicken breasts with salt and pepper on both sides.
Step 2:
Heat olive oil in a large skillet over medium high heat. Add chicken and cook 5 6 minutes per side, until golden and cooked through. Remove from skillet and set aside, covered.
Step 3:
In the same skillet, add mushrooms and onions. Sauté 5 6 minutes until softened and lightly browned. Add garlic and cook 1 minute more.
Step 4:
Pour in chicken broth, scraping up any browned bits from the pan. Reduce heat to medium.
Step 5:
Stir in heavy cream, Dijon mustard, thyme, rosemary, and Parmesan cheese. Simmer gently for 3 4 minutes, until sauce thickens.
Step 6:
Return chicken to the skillet, spooning sauce and mushrooms over the top. Simmer for 2 3 minutes until heated through.
Step 7:
Stir in parsley. Taste and adjust seasoning if needed.
Step 8:
Serve hot, garnished with extra parsley.

How to Make It

Step 06

Combine chicken with sauce: Return the chicken to the skillet, spoon sauce and mushrooms over them, and simmer for 2 to 3 minutes until heated through.

Step 07

Finish with parsley: Stir in fresh parsley, then taste and adjust seasoning if necessary before serving.
