- Mushrooms & Vegetables: 2 cups (200 g) cremini or white mushrooms sliced, 1 small yellow onion finely chopped, 3 cloves garlic minced
- Sauce: 1 cup (240 ml) heavy cream, 1/2 cup (120 ml) low sodium chicken broth, 1 teaspoon Dijon mustard, 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried), 1 teaspoon fresh rosemary minced (or 1/2 teaspoon dried), 1 tablespoon fresh parsley chopped (plus more for garnish), 1/2 cup (50 g) grated Parmesan cheese
Instructions
- Step 1:
- Season the chicken breasts with salt and pepper on both sides.
- Step 2:
- Heat olive oil in a large skillet over medium high heat. Add chicken and cook 5 6 minutes per side, until golden and cooked through. Remove from skillet and set aside, covered.
- Step 3:
- In the same skillet, add mushrooms and onions. Sauté 5 6 minutes until softened and lightly browned. Add garlic and cook 1 minute more.
- Step 4:
- Pour in chicken broth, scraping up any browned bits from the pan. Reduce heat to medium.
- Step 5:
- Stir in heavy cream, Dijon mustard, thyme, rosemary, and Parmesan cheese. Simmer gently for 3 4 minutes, until sauce thickens.
- Step 6:
- Return chicken to the skillet, spooning sauce and mushrooms over the top. Simmer for 2 3 minutes until heated through.
- Step 7:
- Stir in parsley. Taste and adjust seasoning if needed.
- Step 8:
- Serve hot, garnished with extra parsley.
