Crisp cucumbers tossed in garlic, soy sauce, and sesame oil for a quick, flavorful Asian-inspired side.

# What You'll Need:

→ Vegetables

01 - 2 large cucumbers, sliced into 1/4-inch rounds
02 - 2 cloves garlic, finely minced

→ Dressing

03 - 2 tablespoons soy sauce
04 - 1 tablespoon toasted sesame oil
05 - 1 teaspoon rice vinegar
06 - 1/2 teaspoon chili flakes, adjust to taste
07 - 1 teaspoon sugar
08 - 1/4 teaspoon salt

→ Garnish

09 - 1 tablespoon sesame seeds, optional
10 - 2 green onions, thinly sliced, optional

# How to Make It:

01 - Place sliced cucumbers and minced garlic into a large sealable jar or container.
02 - Whisk together soy sauce, sesame oil, rice vinegar, chili flakes, sugar, and salt in a small bowl until sugar dissolves completely.
03 - Pour dressing over cucumbers in jar. Seal tightly and shake vigorously for 30–60 seconds until cucumbers are thoroughly coated.
04 - Let stand for 5–10 minutes to allow flavors to meld and cucumbers to absorb the dressing.
05 - Transfer to serving bowl, sprinkle with sesame seeds and green onions if desired. Serve immediately or refrigerate for extra chill before serving.

# Expert Advice:

01 -
  • The shaking method creates this incredible coating that hand tossing never achieves
  • Ready in ten minutes but tastes like it marinated for hours
02 -
  • The longer they sit, the more water the cucumbers release and the more concentrated the flavor becomes
  • These are best eaten the same day but will keep in the fridge for about 2 days
03 -
  • Cut your cucumbers slightly thicker if making ahead, they will soften as they sit
  • Double the dressing if you love lots of sauce to spoon over rice
