03 60 ml heavy cream
04 15 ml unsalted butter

Meats (optional)

01 3 slices bacon or pancetta, diced (omit for vegetarian)

Flavor & Seasoning

01 2 cloves garlic, minced
02 0.5 teaspoon freshly ground black pepper
03 Salt, to taste
04 15 ml chopped fresh parsley (optional, for garnish)

How to Make It

Step 01

Cook Noodles: Bring a medium pot of water to a boil. Cook ramen noodles following package directions without seasoning packets. Drain, reserving 60 ml of cooking water, and set noodles aside.

Step 02

Prepare Sauce Mixture: Whisk together eggs, grated Parmesan, heavy cream, and black pepper in a bowl until smooth and fully combined.

Step 03

Cook Bacon or Pancetta: Heat a large skillet over medium heat. Fry diced bacon or pancetta until crisp, about 5 minutes. Remove from pan, leaving 15 ml of rendered fat. If omitting meat, add butter instead.

Step 04

Sauté Garlic: Add unsalted butter and minced garlic to the skillet. Sauté for 30 seconds until fragrant, taking care not to burn the garlic.

Combine Noodles and Garlic Butter: Add the cooked ramen noodles to the skillet. Toss them thoroughly to coat in the garlic and butter mixture.

Step 06

Add Egg and Cheese Mixture Off Heat: Remove skillet from heat. Pour in the egg and cheese mixture, tossing quickly and continuously to evenly coat noodles and create a creamy sauce. Add reserved cooking water one tablespoon at a time as needed to loosen the sauce.

Step 07

Finish with Bacon and Seasoning: Stir in the crispy bacon or pancetta if using. Season with salt to taste and mix well.

Step 08

Serve: Plate immediately, garnishing with additional Parmesan cheese and fresh parsley if desired.
