01 - 2 packs instant ramen noodles (discard seasoning packets)

02 - 2 large eggs
03 - 60 ml grated Parmesan cheese (plus extra for garnish)
04 - 60 ml heavy cream
05 - 15 ml unsalted butter
→ Meats (optional)
06 - 3 slices bacon or pancetta, diced (omit for vegetarian)
→ Flavor & Seasoning
07 - 2 cloves garlic, minced
08 - 0.5 teaspoon freshly ground black pepper
09 - Salt, to taste
10 - 15 ml chopped fresh parsley (optional, for garnish)
# How to Make It:
01 - Bring a medium pot of water to a boil. Cook ramen noodles following package directions without seasoning packets. Drain, reserving 60 ml of cooking water, and set noodles aside.
02 - Whisk together eggs, grated Parmesan, heavy cream, and black pepper in a bowl until smooth and fully combined.
03 - Heat a large skillet over medium heat. Fry diced bacon or pancetta until crisp, about 5 minutes. Remove from pan, leaving 15 ml of rendered fat. If omitting meat, add butter instead.
04 - Add unsalted butter and minced garlic to the skillet. Sauté for 30 seconds until fragrant, taking care not to burn the garlic.
05 - Add the cooked ramen noodles to the skillet. Toss them thoroughly to coat in the garlic and butter mixture.
06 - Remove skillet from heat. Pour in the egg and cheese mixture, tossing quickly and continuously to evenly coat noodles and create a creamy sauce. Add reserved cooking water one tablespoon at a time as needed to loosen the sauce.
07 - Stir in the crispy bacon or pancetta if using. Season with salt to taste and mix well.
08 - Plate immediately, garnishing with additional Parmesan cheese and fresh parsley if desired.
