09 - 2 to 3 tablespoons vegetable oil or unsalted butter
# How to Make It:
01 - In a large bowl, thoroughly mix mashed potatoes, chopped ham, diced onion, parsley (if using), egg, flour, salt, and pepper until a thick, uniform mixture forms.
02 - With floured hands, shape the mixture into eight patties, each approximately 2.5 inches in diameter and 1/2 inch thick; lightly dust each with flour.
03 - Warm the vegetable oil or unsalted butter in a large skillet over medium heat until shimmering.
04 - Fry patties in batches, cooking for 3 to 4 minutes per side until golden brown and crisp; avoid overcrowding the skillet.
05 - Transfer cooked patties to a plate lined with paper towels to absorb excess oil; serve immediately while hot.
