05 - 1 cup dark chocolate chips or chopped dark chocolate, at least 60% cacao
06 - 1 tablespoon coconut oil

→ Optional Toppings

07 - 2 tablespoons crushed roasted peanuts
08 - Pinch of flaky sea salt

# How to Make It:

01 - Line a 12-cup mini muffin tin with silicone or paper liners.
02 - In a food processor or blender, blend cottage cheese, honey or maple syrup, and vanilla extract until completely smooth and creamy.
03 - Add peanut butter to the blended mixture and blend again until fully combined.
04 - Spoon the mixture evenly into the muffin cups, filling each about three-quarters full. Smooth the tops with the back of a spoon.
05 - Freeze for 1 hour, or until firm.
06 - Melt the chocolate chips and coconut oil together in a heatproof bowl over a saucepan of simmering water using a double boiler method, or microwave in 30-second intervals, stirring until smooth.
07 - Remove the frozen bites from the freezer. Spoon melted chocolate over each, spreading to cover the tops.
08 - Sprinkle with crushed peanuts and sea salt, if using.
09 - Return the bites to the freezer for at least 1 more hour, until the chocolate coating is set.
10 - Once fully frozen, remove from muffin tin and store in an airtight container in the freezer until ready to eat. Let sit at room temperature for 3 to 5 minutes before serving.

# Expert Advice:

01 -
  • They taste like dessert but pack enough protein that they actually satisfy, not just distract.
  • No baking required, just blending and freezing, which means even a chaotic Tuesday night is fair game.
  • The cottage cheese stays completely invisible while making everything creamy and rich.
  • One bite feels indulgent enough to quiet sweet cravings without the guilt spiral that usually follows.
02 -
  • Do not skip the blending step with cottage cheese alone; this is what makes it invisible and prevents that grainy texture that ruins everything.
  • If your chocolate seizes during melting, add a tiny splash of coconut oil and stir gently until it comes back to life.
  • The salt on top is not optional if you want these to taste like they cost eight dollars at a fancy shop.
  • These need to soften for 3 to 5 minutes at room temperature or your jaw will hate you.
03 -
  • Buy silicone muffin liners because they make removal effortless and you'll actually use them for future projects instead of them sitting in a drawer.
  • If cottage cheese texture makes you nervous, use the creamiest, smoothest brand you can find and blend it solo for an extra 30 seconds to be absolutely sure.
  • Keep the chocolate slightly warmer than you think necessary when coating, because it sets quickly and you don't want thin patches that expose the filling.
