Ingredients

  • Vegetables: 1 large yellow bell pepper, 1 large orange bell pepper, 1 large red bell pepper, 1 cup broccoli florets, 1 cup cauliflower florets, 1 cup cherry tomatoes, 1 cup baby carrots, 1 small cucumber, 6&8 sugar snap peas, 1/4 cup black olives (whole and sliced, for decoration), 2 radishes
  • Dip: 1 cup Greek yogurt (or sour cream), 2 tbsp mayonnaise, 1 tbsp lemon juice, 1 tbsp chopped fresh dill, 1 garlic clove, minced, Salt and pepper to taste

Instructions

Prepare the Dip:
In a small bowl, mix Greek yogurt, mayonnaise, lemon juice, dill, minced garlic, salt, and pepper. Cover and refrigerate until ready to serve.
Wash and Slice Vegetables:
Wash and dry all vegetables. Slice peppers and cucumber into thin strips. Cut radishes into thin rounds.
Create Seahorse Outline:
On a large platter or tray, sketch a seahorse outline with a piece of parchment paper as a template, if desired.
Arrange Bell Pepper Strips:
