# How to Make It:

01 - Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add beef in batches and brown on all sides. Remove and set aside.
02 - Reduce heat to medium. Add onions and cook for 5 minutes until softened, then stir in garlic and cook for 1 minute until fragrant.
03 - Stir in smoked paprika, cumin, and thyme. Cook for 1 minute, stirring constantly to release aromas.
04 - Add carrots, celery, potatoes, and bell pepper. Mix thoroughly to combine ingredients.
05 - Return browned beef to the pot. Add diced tomatoes, tomato paste, bay leaf, salt, and black pepper. Stir well.
06 - Pour in beef broth, stir to combine, and bring to a gentle simmer.
07 - Cover and simmer gently for 1.5 to 2 hours, stirring occasionally, until beef is tender and vegetables are cooked through.
